Dry Shrimp Pie Recipe

It is very simple to make and can be served as a beautiful accompaniment to a main dish made with seafood, the result is wonderful!

This airy pie, which is a little reminiscent of the souffle, is perfect with the dried shrimp, which guarantees a remarkable flavor and a light smoked touch, very peculiar to this type of shrimp. Ingredients for making Dried Shrimp Pie:

 2 tablespoons of olive oil

 250 grams of smoked dry shrimp (without heads and without tails)

 2 medium cooked potatoes (in cubes)

 ½ chayote cooked in cubes (optional)

 3 chopped garlic cloves

 ½ red pepper diced

 ½ can of peas

 1 chopped medium onion

 2 small chopped tomatoes (seedless)

 green smell (to taste)

 Salt and black pepper to taste)

 paprika or annatto (to taste)

 ½ lemon

 5 large eggs (whites and separate yolks)

 1 tablespoon of wheat flour

How to make Dry Shrimp Pie:

Separate all the ingredients from the recipe to facilitate its execution.

Before starting the recipe, it is necessary to soak the dry shrimp in water (changing it about 4 times) for 12 hours or, if you prefer, overnight, to remove excess salt and coloring (if if there is coloring in the shrimp). After this process, remove the heads and tails of the shrimp.

If the prawns are still too salty, bring them to the heat until it boils and discard the water.

Meanwhile, cook the potatoes and chayote in salted water or, if you prefer, steam them, without letting them overcook.

In a large saucepan, heat the olive oil and saute the chopped onion and garlic until lightly browned. Then add the dried shrimp, tomatoes and peppers, sauteing them for 5 minutes over medium heat, stirring occasionally.

At this point, add the boiled and drained vegetables, peas, the green scent, salt, black pepper, paprika or annatto, mixing everything gently, letting it simmer a little longer.

Add lemon and mix well. Turn off the heat and let the filling stay warm to continue the preparation of this salty pie from Maranhão.

In an electric mixer, beat the egg whites with a pinch of salt. Then add the yolks (one by one) and continue beating.

Tip: Preheat oven to 180-200 degrees at this time.

Add wheat flour to eggs beaten in snow and mix until incorporated.

Tip: Sift the flour before adding it to the eggs to avoid lumps.

Add 2 scoops of eggs beaten in snow to the warm stew, mixing gently, so as not to lose air. Reserve.

Grease a medium serving dish with oil and flour with flour. Prepare a layer with the eggs beaten in snow, reserving a part to cover the pie.

Place the filling over the snowy eggs, spreading with the help of a spatula.

Cover the filling with the remaining egg mixture in snow and decorate as you like. Here we decorate with slices of red pepper, olives, onions and dried shrimp.

Take the dry shrimp pie to bake in a preheated oven at 180-200 degrees for approximately 30 minutes or until lightly browned, as pictured.

Tip: The pie will wither a little after baking in the oven, this is normal.
