Ingredients for making corn cake with the curasse bagasse:

 2 cups of corn cake

 1½ cups unleavened wheat flour

 ¾ cup of crystal or refined sugar

 1 cup of cow or coconut milk

 2 medium eggs

 1 tablespoon of butter or margarine

 1 teaspoon of chemical yeast

 1 teaspoon ground cinnamon (optional)

How to make corn cake with curau bagasse:

Start by mixing the corn cake with sugar, milk, eggs and butter or margarine in a blender until the mixture is as smooth as possible.

Tip: this amount of corn bagasse will be equivalent to 4-6 ears of corn bagasse.

Then, add the wheat flour little by little to this mixture of cake and cornmeal. Beat just until the flour is incorporated and, if desired, add the cinnamon as well. Finally, lightly mix the yeast without beating.

Tip: if you beat the flour too much, the result can be a lone cake. That's why it's important to add the flour little by little (2 to 3 times), beating only until incorporated.

Preheat the oven to 200ºC (high oven) with heat above and below. Grease with oil or butter a hole in the middle about 22 cm in diameter and sprinkle flour or sugar all over it. Put the dough of this corn cake there.

When the oven is at the indicated temperature, place the green corn cake to bake for 30-40 minutes or until golden brown and pass the toothpick test.
